Honey I'm Home Shrimp Stir Fry




I kicked the Northern snow off my boots and dusted them in the South Florida sand Sunday afternoon. Is it ever good to be home. Rich, Isabella, & I had a lovely time visiting with family and friends in Pennsylvania over the Thanksgiving holiday. It was wonderful to reminisce old memories and make new ones. We had some snow flurries the last two days we were at my parent's home. It was not Bell's first snow experience, but her first snow memory was made. We visited my parent's and and had a beautiful snowfall when Isabella was just a tiny 7 week old baby.

We arrived to our home weary with travel around dinner time.I threw together this quick shrimp stir fry that is nice and light following a day week of thanksgiving overindulgence.

Honey I'm Home Shrimp Stir Fry

1 TBS of extra virgin coconut oil
1 tsp of minced fresh ginger
1 lbs of frozen cooked shrimp (with tails on)
3 cups of chopped fresh broccoli heads
1 orange bell pepper thinly sliced
2 cups of washed sliced mushrooms
2 TBS of Bragg's liquid aminos or gluten free soy sauce
Pinch of red pepper flakes
Cooked quinoa
2 TBS of raw cashew pieces

Heat oil in large stir fry pan on medium low heat. Add ginger and saute for one minute. Next, add broccoli, bell pepper, mushrooms, and shrimp. Saute for 3 minutes. Add in 2 TBS of water, liquid aminos or soy sauce, and red pepper flakes. Cover pan with lid. Cook until veggies are tender and shrimp is heated. Serve over quinoa with additional liquid aminos and raw cashew pieces. Serves 3-4.
